Health Foods For Summer – Tomatoes

A tomato a day keeps skin cancer away. It doesn’t sound plausible, but a study has shown participants who ate a small amount of tomato paste each day for 10 to 12 weeks were less affected by UV rays. Tommies contain high amounts of lycopene, which helps protect against suburn, the cumulative effect of which is often be skin cancer.

Also, tomatoes are a rich source of Vitamins A, C, K, potassium and folate. They have none of the bad stuff like saturate fat or sodium. Use plenty of fresh tomatoes in a salad, make tomato a staple of your sandwiches, or snack on fresh cherry tomatoes like fruit – because that’s what they are.

Did you know tomatoes are called ‘Love Apple’? I recently discovered it myself. Anyway, I have loved tomatoes since a baby. There are so many reasons to splurge on this wonderful fruit. (or vegetable?)

Holy moly, I think I just got a twitch from wanting that so badly. Fortunately when I get home I’m totally going to hit that. I have one beautiful tomato left from my last farmers market visit and basil in my garden!!
